KIWI-TURNIP SALAD

1.25 lbs. Turnips (Approx. 3 turnips)
7.5 each Kiwi Fruit
1/4 cup Pomegranate Seeds
1/8 cup Olive Oil
3 tablespoons Apple Cider Vinegar
1/8 cup Honey
Salt To taste
Pepper To taste
1. Cut off ends of turnips and leave unpeeled.
2. Peel kiwi.
3. Julienne or dice turnips.
4. Dice or slice kiwi.
5. Combine turnips, kiwi and pomegranate seeds.
"6. Combine oil, vinegar and honey. Season with salt and pepper.
Whisk dressing."
7. Lightly mix dressing with turnips, kiwi and pomegranates.
8. Refrigerate.
