7 lbs. or 5 heads Bok Choy
2 medium red peppers, diced
1 bunch scallions, chopped
1/2 lb. Shitake mushrooms or regular, sliced
1/2 cup orange juice
1/4 cup red wine vinegar
1 cup soy sauce, lite
2 tablespoons honey
1/4 cup olive oil
Chop bok choy, dice red pepper, and chop scallions and combine. Steam or sauté in 1/4 inch of water bok choy mixture until tender. Slice shitake mushrooms. Combine orange juice, vinegar, soy sauce, honey, and oil. Add mushrooms and liquid mixture to bok choy. Toss. Steam or sauté for another 1-2 minutes.
