SPICY ROASTED BOK CHOY

7 lbs. or 5 heads Bok Choy
2 each medium onions
Dressing:
2 each medium onions, diced
1/4 cup diced ginger, fresh
10 cloves garlic, fresh, diced
2 each bananas, chopped
1/2 cup apple cider vinegar
1/3 cup oil, sesame, olive, or veg.
1/8 cup lemon juice
1/4 cup honey
1/4 cup red pepper flakes
Slice bok choy into large pieces. Thinly slice onions. Preheat convection oven to 400 degrees, conventional to 425 degrees. Line sheet pans with parchment paper. Prepare dressing. Put diced onion, garlic, ginger, banana, vinegar, oil, lemon juice, honey, and red pepper flakes in a blender of food processor. Process until smooth. Toss bok choy and onions with dressing. Spread bok choy onto sheet pans. Poor remaining dressing over bok choy. Bake for 8-10 minutes until the thickest ends of bok choy are tender. Can be served hot or cold.
