SPICY ROASTED SWEET POTATOES

15 lbs. sweet potatoes, fresh
2 cups orange juice
1 cup oil, Olive or Vegetable
3/4 cup honey
1.5 teaspoons cayenne pepper
1.5 teaspoons cumin
1.5 teaspoons smoked paprika
2 teaspoons salt
Preheat convection oven to 425 degrees, conventional to 450. Wash and slice potatoes into 1/2 inch strips. In a bowl, whisk together orange juice, honey, cayenne, pepper, cumin, and smoked paprika. Line sheet pans with parchment paper. Place potatoes in a single layer on sheet pans. Pour half of orange juice mixture evenly over sweet potatoes. Bake in convection oven for 25-30 mins; bake in conventional for 30-35 mins., until golden brown. After 15 minutes, gently stir potatoes and pour remaining orange juice sauce over potatoes. Continue baking. Sprinkle sea salt or regular salt over potatoes before serving.
