ROASTED TURMERIC BOK CHOY

7 lbs. or 5 heads Bok Choy
1/2 cup olive oil
1/2 cup or 1/4 lb. ginger, fresh, minced
2 tablespoons garlic, minced
1 tablespoon turmeric, ground
1 tablespoon curry powder
1 tablespoon basil, dried
1 teaspoon red pepper flakes
Salt, to taste
Slice bok choy into large pieces. Preheat convection oven to 400 degrees, convention oven 425. Line sheet pans with parchment paper. Toss bok choy with oil, ginger, garlic, turmeric, curry powder, basil, and red pepper flakes. Season with salt. Spread bok choy onto sheet pans. Pour remaining liquid over bok choy. Bake for 8-10 minutes or until thickest ends of bok choy are tender. Can be served hot or cold.
